3 cups all-purpose flour
2 cups sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda

1 1/2 cups oil
1 tablespoon pure vanilla extract
1 8-ounce can crushed pineapple, undrained
1 1/4 cups shredded carrots
2 cups chopped pecans
2 cups finely chopped bananas
Ingredients for hummingbird cream cheese frosting
2 8-ounce packages cream cheese
1 cup unsalted butter,softened
4 cups, approximately, confectioners'sugar
2 teaspoons pure vanilla extract
cream or water, as required
