  • 1 1/2 cups oil
  • 1 tablespoon pure vanilla extract
  • 1 8-ounce can crushed pineapple, undrained
  • 1 1/4 cups shredded carrots
  • 2 cups chopped pecans
  • 2 cups finely chopped bananas
  • Ingredients for hummingbird cream cheese frosting





  • 2 8-ounce packages cream cheese
  • 1 cup unsalted butter,softened
  • 4 cups, approximately, confectioners'sugar
  • 2 teaspoons pure vanilla extract
  • cream or water, as required
  • finishing touches
